Single Serve Ice Cream Pies Are Easy and Fun to Make

Oberweis ice cream serves as a delicious base for a variety of mix-ins and flavors. Scoop the mixed ice cream into mini pie shells for a fun treat.

Ice cream pie is easy to make, easy to customize and a great alternative to a plain scoop of vanilla. For a change, try using individual pre-made pie crusts instead of one big pie crust. The mini crusts offer an attractive presentation, not to mention built in portion control.

store on Mexico Road offers great inspiration for your ice cream pie base. I prefer to start out with plain vanilla or chocolate ice cream and mix in our favorites. Get creative or use some of my ideas below.

For the following, I started with Oberweis vanilla ice cream. All other ingredients are found in the aisles of Schnucks or Dierbergs. The Almond Accents can be tricky to find, but most times they are available near the salad dressing. The combination of the sweet ice cream and the salty, seasoned almond slices is my personal favorite!

Oberweis Mini Ice Cream Pies

Serves 6

The Base:

  • 1 Package Keebler Mini Graham Cracker Pie Crusts (6 count)
  • 3 cups Oberweis vanilla ice cream, softened

Crème de Menthe Pie

  • 6 tablespoons Andes Crème de Menthe Baking Chips to mix in
  • ¼ teaspoon green food coloring (optional)
  • 6 teaspoons Andes Crème de Menthe Baking Chips for topping

Mix together the ice cream, 6 tablespoons Andes Crème de Menthe Baking Chips and food coloring. Spoon the ice cream mixture evenly into each pie crust. Top each pie with 1 teaspoon of the baking chips. Freeze until firm, about two hours.

Peanut Butter Pie

  • 6 teaspoons creamy peanut butter to mix in
  • 6 tablespoons dry roasted peanuts for topping

Mix together the ice cream and peanut butter until the peanut butter is fully incorporated. Spoon the ice cream mixture evenly into each pie crust. Top each pie with 1 tablespoon of the dry roasted peanuts. Freeze until firm, about two hours.

Oreo Ice Cream Pie

  • 6 Oreos (or other sandwich cookie), crushed, to mix in
  • 3 Oreos (or other sandwich cookie), halved, to top

Mix together the ice cream and the crushed Oreo cookies. Spoon the ice cream mixture evenly into each pie crust. Top each pie with one half of the Oreo cookie. Freeze until firm, about two hours.

Peanut Butter Cup Pie

  • 4 tablespoons dark chocolate chips to mix in
  • 4 tablespoons peanut butter baking chips to mix in
  • 6 mini peanut butter cups, halved, to top

Mix together the ice cream and both the chocolate chips and the peanut butter baking chips. Spoon the ice cream mixture evenly into each pie crust. Top each pie with two halves of the peanut butter cup. Freeze until firm, about two hours.

Caramel Pie

  • 12 teaspoons caramel sauce, divided
  • 1 teaspoon brown sugar

Stir 6 teaspoons of caramel sauce with the ice cream, using a fork. Some streaks of caramel will remain. Spoon the ice cream mixture evenly into each pie crust. Freeze until firm, about two hours. Just before serving, drizzle the remaining caramel sauce over the top of the pies. Sprinkle with a pinch of brown sugar.

Almond Delight

  • 6 tablespoons Almond Accents to mix in
  • ½ teaspoon almond extract
  • 6 teaspoons Almond Accents for topping

Mix together the ice cream, 6 tablespoons Almond Accents and almond extract. Spoon the ice cream mixture evenly into each pie crust. Top each pie evenly with the remaining 6 teaspoons of Almond Accents. Freeze until firm, about two hours.
