A 30-day gluten-free challenge led Nichole and Angel DiGiuseppi to a new career path. On Sunday, they opened The Organic Cave, a paleo bakery, in New Town. About a year ago the couple, who live in St. Peters, eliminated gluten, grain, soy and dairy from their diet for 30 days in an effort to address allergies and migraines. "We felt amazing," Nichole DiGiuseppi, 42, said. "We realized we felt great not eating those things. We didn't realize we felt so bad until we got rid of those things." If you have a budding baker or two at your house itching to learn more about breads and pastries, now they have a chance. In April, St. Louis Bread Co. started a new program designed for foodie children. Involving 16 café locations in the area, the B.I.T. (Bakers In Training) Kids program brings children ages 5 to 12 behind the scenes, showing them how a bakery works and even letting them participate in kitchen activities.
